How to Use
This paste contains cocoa butter which warms as you knead it. For best results:
- Start by slicing your paste into 8 equal rectangular pieces.
- Slice each piece into several more pieces, continuing to dice the paste into very small pieces.
- Mix your small pieces of paste together by hand. The heat from your hands will warm the cocoa butter, bringing it to a workable consistency (it may appear crumbly initially).
- Press the crumbly pieces together into five small balls of paste.
- Knead each ball until soft, then knead them together into three larger balls of paste.
- Finally, combine the three large balls. The paste should now be malleable and easy to work with. Avoid over-kneading, which may cause the cocoa butter to release and make the paste sticky.
Keep unused paste covered airtight and store in a cool, dry place out of direct sunlight. Keep paste covered while using, as it dries quickly.
